Picadillo soup Andalusian style - Sopa de picadillo

This is a very typical Andalusian soup dish, the main ingredient is a kind of short pasta called �fideo cabell�n� and it's delicious during cold weather.


Ingredients

Homemade chicken broth, enough to cook the noodles
"Fideos cabell�n" (small thin noodles)
Hard boiled eggs
Serrano ham, cut into strips or diced
Croutons
A few sprigs of fresh mint (optional)


Directions

Bring the broth to a boil with a few sprigs of mint to give its flavour. When it begins to boil add the thin noodles. Stir occasionally until noodles are at your taste.

Serve immediately: sprinkle on top hard-boiled egg finely chopped, strips of Serrano ham and some croutons.  And enjoy!
